At Château Hyot, the harvest is done by hand. Cold maceration and alcoholic fermentation continue in the cellar, then maolactic fermentation takes place in large oak barrels for malolactic fermentation.The aging takes place for 18 months in barrels, 60% of which are renewed each year.
